058: Creating an Authentic Locally Made Sake in New England w/ Todd Bellomy

On this episode of Small Business Japan I talk with Sake Brewer, owner, and Consultant Todd Bellomy about his life in Japan, how he got his start in the sake industry, and some thoughts on authenticity and Japanese products outside of Japan. 

I’ll start this episode off by letting you know that because I geeked out so much on the topic I felt it best to split this into a 2-part show. Without further a due, Sake brewer Todd Bellomy works as a sake & craft beer industry consultant while developing and fundraising to start a sake brewery. He has many years of alcohol and restaurant industry experience, including certifications as a Cicerone and Sake Advisor. Once upon a time, he lived in Japan, visited izakaya, and worked as a sword maker’s apprentice and English teacher. 

Check out the upcoming part 2 of this episode where we continue to delve into the numbers a bit more and get some great advice for entrepreneurs everywhere.  

Once you are in Japan it’s a lot easier to do other things in Japan, like job hunt, explore other traditions etc.  

Sake is a very small part of the alcohol market in the US, therefore the major distributors often don’t give very much man-power or attention to it.  

Smaller sake breweries can coexist with smaller local places and grow the market together. 

Smaller sake breweries have the advantage of educating people and being a part of the community as well as offering a hyper local and freshly brewed sake.  

Ideas of authenticity. He’s found that a locally brewed sake is appreciated authentically as a locally brewed delicious drink first and foremost. He is not Japanese and his brand is not going to be a Japanese brand, But he aims to create an authentic New England brewery that provides the customer with good education. 

This allows him to be more playful and express his creativity in his sake brewing. 

Craft beer has grown on the backs of solid education. People started asking detailed questions about how beer was made, what are hops…
